A softly spiced, comforting and filling Massaman curry with coconut milk, sweet potato, tamarind and warm spices.
Massaman is deep and gently sweet-savoury. Cinnamon, star anise, cardamom and bay leaf give it a warm, almost festive character without strong heat.

Ingredients
- 1 pouch Blue Elephant Massaman curry sauce 300 g
- 200 g chicken breast, thinly sliced
- cooked potato or sweet potato cubes, if desired
- fresh coriander for finishing, if desired
Method
- Heat the Blue Elephant Massaman curry sauce in a saucepan.
- Add the sliced chicken directly into the sauce. Add cooked potato or sweet potato cubes if desired.
- Simmer gently until the chicken is cooked. Add a small splash of water if you prefer a looser sauce.
- Serve with jasmine rice if desired. Finish with fresh coriander.
